Judge a very good Köchel number for composer (7)

I think the judge one is Janacek. J for judge an ace for very good and K for Kochel number. Could the n be incorrect?

 

 

 

How Enright is made to do things differently? (4,3,7)

Could be Ring the changes.

Anagram of enright plus changes. Although that questions the M above. 

 

The N and M came from

Capital fellow on the Spanish Main? (7)

which I had as PANAMAN but now realise must be MANAGUA. Is agua being Spanish for water part of the derivation?

Here goes for an explanation of the process and answer - 
 
all cryptic clues have two parts. One is a simple clue to the answer, the rest is word play which also creates the answer, but often serves to confuse! In this example "Capital" is the simple clue. All the other words make up the word play, which is Man (for fellow) plus on the Spanish Main Agua is as Aeolienne has spotted Spanish for water. Nothing to do with piracy!
Managua is the capital city of Nicaragua.

There are still some unanswered clues. I take no credit for this answer as I googled navigational routes and it came up with the clue and answer, ortolan. Apparently portolano  is an atlas and removing its cover, po, leaves ortolan. I would never have solved this unless I’d been given a lot more letters.

I’d got as far as working out that coverless was a word without its first and last letters - but hadn’t worked out what the word was  ! 

Ortolan rings a bell - is it a wheatear ?   Probably way off beam.
